Spectacular Views and Delightful Menu at Maritime Parc in Jersey City

Maritime Parc opened about two years ago to rave reviews. Voted among the top twenty-five restaurants in New Jersey by New Jersey Monthly Magazine, the restaurant is truly a dining and visual experience.
“Executive Chef/Partner Christopher Siversen’s sense of creativity in the preparation and presentation of food is above and beyond all that may be in the ‘World of Dining’,” said Estefany Echanagusia, Restaurant Manager. “Chef Siversen uses organic and local seasonal produce in all of his dishes. People dining at Maritime Parc love his innovative style."
Must starters on a cold winter's night include: Roasted Butternut Squash Soup, spiced pumpkin seeds and apple, ($11); Maritime Parc’s most popular salad, Baby Arugula, Valdeon Blue Cheese, ($12); Poached Pears, and Spiced Pecans, subtle, black pepper vinaigrette, and local, Grilled Oysters with leek and Bacon Cream, ($14).
Noted Main Dishes include: Fresh Strigoli Seafood Pasta, Scallops Crab, Shrimp, lemon-thyme reduction, ($24); Local Sea Scallops, Braised Short Ribs, and Sauce Gribiche, ($23); Baked Duck Confit, Pasta Gratin, Cognac Béchamel, Caramelized Shallots, dried berries, ($22), Niman Ranch Pork Chop, braised cabbage-barley kraut, pear chutney, red eye gravy, ($23), Niman Ranch Filet Mignon, Smoked Mushrooms, glazed red pearl onions, parsley salad, ($28).
“I learned to prepare Sauce Gribiche at the French Culinary Institute,”  adds Chef Siversen. “Whenever possible, I use it in many of our celebrated dishes.”
Hired as a sous chef for the French Culinary Institute, Chef Siversen headed the kitchen at Alison on Dominick, and the 21 Club in New York City, before entering the catering business. He also manned the kitchen for Pamela Morgan, who owned Flavors, and catered to the “A” List of New York Society. From there, he held stints at The Glazier Group’s fine dining and catering at Westminster Hotels, Twenty Four Fifth, and Bridgewaters to Go in New York City. Not only did he serve as executive chef at all of these locations, he was also Director of Catering Operations, as well. 
“Being an executive chef and owner of Maritime Parc allows me the opportunity to become involved in each and every phase of the  dining business,” he said. “Maritime Parc is not only synonymous with High End Dining, folks need to know that we have deemed ‘Thursday Night as Burger Night’!
“Guests start off with 1/2 dozen local oysters, then have the choice of three delicious Burgers: The “MP” Burger, with special sauce; a Salmon Patty Burger, or a Scallop Burger served with fries. Each of the burgers are paired with a beer or glass of wine, and cost a mere $20.00 each.”
Editorial comment: Burger Night is the most, fantastic, delicious bargain you may ever find...served with a colossal view!
A most creative Pastry Chef, Elizabeth Katz from Westfield, bakes Chocolate Towers consisting of Chocolate Cake, with rich chocolate fudge icing, served with her own, house-made Vanilla ice cream. Her Warm Apple Tart, prepared with fresh apples and all the right spices, arrives with a Buttery Crumb Crust, and is served with Vanilla Ice Cream, ($9). Yes, the menu features a rich Creme Brulee braised with a layer of Caramelized Sugar, and a light Creamy Cheesecake with a graham cracker crust. ($9 each).
“We prepare all of our ice cream and sorbets in house,” said Katz. “Our most favorite flavors are Pistachio French, Eggnog for the Holiday Season, and Cinnamon Caramel Swirl.”
“Elizabeth brings a major talent to Maritime Parc. I believe her confections are the best desserts ever served,” adds Executive Chef Siversen.
You will not only enjoy the food at Maritime Parc, the ambiance is beyond magnificent. Imagine dining on the water with scenes of beautiful boats floating past, a view of the New York Skyline, the Statue of Liberty, and Old Glory blowing in the distance. Nothing could be more glorious!

The Very Last Day of the Year, 2012
Known as Resolutions, it’s time to make some important decisions for 2013. Along with adhering to a diet, and making the most of each and every day, I’d like to include clearing the clutter out of our lives, and off of our desks.
Let’s all start with a fresh, clean slate!
